Ceylon is lighter, softer, and more delicate in flavor, while Cassia is darker, stronger, and more common in everyday use. But what is the difference between these two? Cassia cinnamon

Cassia cinnamon is processed the same way as any other cinnamon. The variety is scientifically known as Cinnamon aromaticum or Cinnamon cassia. It is light reddish-brown and has a strong flavor. Cassia is also known as Vietnamese cinnamon. 

The Cassia cinnamon tree can grow up to 10–15 meters tall. Its leaves are stiff, fairly long, and have a reddish tint when young. As the tree matures, the bark changes from gray to a deep reddish-brown color. It is mainly used for essential oil extraction or as a spice.

Because it contains about 95% cinnamaldehyde, Cassia cinnamon has a spicier and more bitter flavor compared to some other common types of cinnamon.

Ceylon cinnamon

Ceylon Cinnamon is native to Sri Lanka. It contains more than 80 chemical components. Cinnamaldehyde is the most essential component that can be found in its bark. Due to its high quality and unique chemical composition, Ceylon Cinnamon is relatively expensive. 

Ceylon cinnamon is lighter brown when compared to cassia cinnamon. Ceylon cinnamon bark is usually quite soft, has a slightly dark brown color, and a mildly sweet flavor with little bitterness, as it contains only about 50–63% cinnamaldehyde.

Ceylon cinnamon is commonly used in making mulled wine or as a medicinal ingredient in traditional medicine. In India, it is also used in tea preparation to enhance the flavor.

Several studies of adults and animals with diabetes have found that Cassia cinnamon can help lower blood sugar, though others haven't shown similar results. Scientists still don't know how Cassia cinnamon may work. It's also unclear how much you would take and how long the results might last.

The difference between Cassia cinnamon and Ceylon cinnamon

Thanks to its lower cinnamaldehyde content, Ceylon cinnamon has a milder spiciness with a hint of sweetness. As a result, it is often preferred in cinnamon-based desserts and lighter dishes compared to Cassia cinnamon.

Cassia cinnamon contains a relatively high level of coumarin — about 1%. Coumarin is a compound that can be toxic in large amounts and has been linked to liver, kidney, and lung damage. However, if used in proper amounts and not too frequently, the coumarin content in cinnamon is unlikely to cause significant harm to your health.

Once these two varieties enter the market, they can be identified based on the shape and pattern of the quills. The quills of Ceylon cinnamon are made using the dried inner bark of the stems which are rolled into quills that are less than 0.08 mm of thickness. It has a single spiral curl and it is filled with single short pieces of bark.

Cassia cinnamon is rolled to the center to make scrolls that have a thickness of 1.5mm. When dried, it forms a double curl and a small bit of a straight bark. Its other long edge spirals towards the opposite direction.
